As part of our Playing the Past badge, we chose a fruity snack for our Juniors to prepare: watermelon. Interestingly watermelons were cultivated in Ancient Egypt!
With the Watermelon Salad recipe from River Valleys council, the girls quickly learned that a sweet fruit could be transformed into something more savory with just a few ingredients. The key with new flavor combinations is that you are trying them, and it’s ok to like or dislike them.
3 cups cubed watermelon
3 Tbsp. olive oil
2 Tbsp. chopped fresh mint
¼ c chopped basil
2 Tbsp. finely chopped flat parsley
Salt and pepper to taste
Mix the dressing ingredients together and then toss with watermelon cubes in large bowl.
Other variations include adding feta to the recipe.
